Quick Delicious Pizza in less than 30 minutes

Sometimes you just feel straight up lazy.  And by you I mean me.  And by sometimes, I mean often.  Sometimes it's one of those nights where you just wanna plop down on the couch and fire up Netflix or Hulu while inhaling some kind of unhealthy, yet oh so delicious, snack while the house remains dirty, work needs to be done and don't have anything in mind for dinner.  Soon after the kids remind me gently, politely, loudly and incessantly that they are hungry.  Days like this are the perfect time to whip up some quick pizza dough and have a bake really good pizza right at home. And thankfully, from start to finish, you can have this pizza ready in less than 30 minutes. 

Ingredients

cornmeal
2 Tbs olive oil
1 tsp sugar
¼ tsp garlic powder
¼ tsp oregano
2¼ tsp active yeast (or 1 package)
1 cup warm water
2½ cups all purpose flour
1 tsp salt

Instructions

Put pizza stone in oven
Preheat oven to 500 degrees (550 degrees if your stove goes that high)
Dissolve yeast and sugar in warm water in a medium mixing bowl and allow to bloom, letting stand 9 minutes.
Add flour, olive oil and salt and beat until smooth. Let rest for five minutes.
On a lightly floured surface, roll out dough to desired thickness and transfer to a pizza peel or cookie sheet prepared with a dusting of cornmeal.
Add desired toppings and cook for 10 minutes or until golden brown.

Some people pile on the toppings with their pizza.  That can be fun and good at times, but other times, simple is better and just as good.  Fewer toppings helps the pizza crust come out nice and crispy.  Pizza toppings release moisture while cooking, so the more toppings, the more moisture seeps into the dough, making it take longer for the dough to crisp.  That said, if you prefer more toppings, lower the baking temperature to something like 450 degrees and cook longer, 16-20 minutes.  We usually like a nice basic margherita pizza, with tomato sauce, mozzarella, and basil.  However adding sausage, pepperoni, mushrooms, and often whatever leftovers might be on the fridge, works just as well.
